PREPARATION: Drain the beans and dice the tomatoes. Heat the oil over medium heat. Add the garlic and sage and sauté until fragrant. Add the tomatoes and simmer gently for 45 minutes. Add the beans cover and cook on very low for 5 minutes. Season with salt and pepper. The finished dish should have the consistency of soup.COOK'S TIP: This is one of the most famous of Tuscan winter dishes. It is usually served with mildly spiced sausages, which are sautéed in a cast iron skillet for a few minutes with a tablespoon of olive oil.
