Serves:
PREPARATION: Cook pasta as directed on package. Keep 1 cup of the pasta cooking water. Heat the oil in a large skillet over medium heat. Add the garlic, anchovies and sun – dried tomatoes and stir for about 1 minute.Drain the pasta and place it in the skillet. Season lightly with salt and generously with pepper. Add about ½ of the pasta water (reserved) and fresh herbs. Stir well over low heat to combine. Add mozzarella and a bit more pasta water if needed. Stir once or twice. Taste. Adjust. Serve.
