PREPARATION: Heat the butter and oil in a large frying pan and cook the chicken for 5-7 minutes until golden brown on all sides. Remove from pan and keep warm. Pour the wine into the pan and bring to a boil, scraping bits from bottom of the pan. Add remaining ingredients, cook for 2 minutes, then lower the heat and put the chicken back in the pan. Cover the pan and let chicken cool gently for 45 minutes, adjust seasonings and serve.
