What Is Braised Zucchini?
A skillet braise where zucchini sticks cook down in mashed plum tomatoes with shallot, gaining black olives and herbs at the end, then resting under a melting blanket of mozzarella cubes.
Why Make Braised Zucchini?
- The residual-heat mozzarella melt is the trick
- Zucchini stays in tidy sticks, not mush
- Olives added late keep their brine
- One pan, vegetarian, 40 minutes
- A side that doubles as a meatless main with bread

Ingredients
- 6 zucchini (trimmed, cut into 2-inch sticks)
- 3 tbsp olive oil
- 2 tbsp butter
- 1 shallot (chopped)
- 398 mL plum tomatoes (canned, mashed with a fork)
- 3 tbsp stock (as needed)
- salt and pepper (to taste)
- 20 pitted black olives (halved)
- 1/4 tsp oregano (chopped)
- 1 tbsp parsley (chopped)
- 1 ball mozzarella cheese (cubed)
Instructions
- Top and tail the zucchini, wash, dry and cut into 2-inch sticks.
- Heat the oil and butter in a large shallow pan; cook the chopped shallot over low heat until softened.
- Add the zucchini and cook a few minutes over high heat, then reduce to medium.
- Add the mashed tomatoes, season with salt and pepper, and cook until the zucchini is tender, adding a little stock if needed.
- Add the halved olives, oregano and parsley.
- Scatter the cubed mozzarella over the top, cover the pan, switch off the heat and rest a few minutes before serving.
Cooking Tips
- Cut the zucchini into even sticks so they braise uniformly
- Hit the zucchini with high heat first for colour
- Add stock only if the pan runs dry
- Turn off the heat before the mozzarella goes on — it should soften, not seize
- Rest covered a few minutes before serving
Frequently Asked Questions About Braised Zucchini
-
1. Why add the mozzarella off the heat?
Residual heat softens it into creamy pockets; direct heat would turn it rubbery.
-
2. Can I make it vegan?
Yes — skip the butter and mozzarella; it's still a satisfying tomato-braised side.
-
3. What kind of mozzarella works best?
A fresh ball, cubed; low-moisture also melts well here.
-
4. Is this a side or a main?
A side for 6 or a meatless main for 4 with crusty bread.
-
5. How do I store leftovers?
Refrigerate up to 3 days; reheat gently — the mozzarella will re-melt.
