Ingredients
- 2 cups all-purpose flour
- 9 tbsp butter
- 1/4 tsp salt
- 2 tbsp dry parmesan cheese
- 1 egg (beaten)
- 2 tbsp cold water
- 2 tbsp olive oil
- 1 onion (large, finely chopped)
- 1 clove garlic (chopped)
- 14 oz diced tomatoes (canned)
- 4 tbsp tomato paste
- 100 ml roasted sweet peppers (sliced)
- 5 sprigs thyme (stalks removed)
- 6 pitted ripe olives (halved)
- 1/3 cup parmesan cheese (grated)
Instructions
- Sift the flour and rub in the butter to make a crumbly dough; stir in the salt and dry parmesan.
- Add the beaten egg and 1 tablespoon of the water and mix with a round-bladed knife, adding more water if needed to make a soft dough; cover and chill 30 minutes.
- Heat the oil in a skillet and cook the garlic and onion about 5 minutes, until golden; add the diced tomatoes and cook 8-10 minutes, then stir in the tomato paste.
- Roll out the dough to fit a 9-inch loose-based fluted flan pan, cover with foil and bake at 400F for 10 minutes, until just set; remove the foil and bake 5 minutes more until lightly golden. Cool slightly.
- Spoon the tomato sauce over the pastry base and top with the roasted pepper strips, thyme, halved olives and grated parmesan.
- Return to the oven for 15 minutes, until the pastry is crisp. Serve warm or cold.
Cooking Tips
- Keep the butter and water cold for a tender crust
- Blind-bake under foil so the base sets before topping
- Cook the tomato sauce down so the base doesn't go soggy
- Strip the thyme leaves from the woody stalks
- Let it cool a few minutes before unmoulding the flan pan
