Ingredients
- 1/2 cucumber (peeled and roughly chopped)
- 1 cup yogurt (thick, unsweetened)
- 1 tbsp mint (chopped, plus sprigs to garnish)
- 4 pita breads
- salt and pepper (to taste)
- 2 cloves garlic (crushed, for the olive dip)
- 1 cup pitted black olives (canned)
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp parsley (chopped, plus sprigs to garnish)
Instructions
- Make the tzatziki: sprinkle the chopped cucumber with salt and let stand 15-20 minutes, then rinse with cold water and drain well.
- Mix the cucumber, yogurt and mint; season with salt and pepper, transfer to a serving bowl, cover and chill 20-30 minutes.
- Make the olive dip: process the garlic and olives in a food processor for 15-20 seconds, or chop very finely by hand.
- Add the olive oil, lemon juice and parsley and process a few seconds more (or mash together by hand); season with salt and pepper.
- Wrap the pitas in foil and warm on a barbecue 2-3 minutes, turning once — or in the oven or under a broiler.
- Cut the warm pitas into pieces and serve with both dips, garnished with mint and parsley sprigs.
Cooking Tips
- Salt and drain the cucumber so the tzatziki stays thick
- Use thick yogurt — strain regular yogurt if needed
- Pulse the olive dip — it should stay slightly coarse
- Chill the tzatziki at least 20 minutes
- Warm the pitas just before serving
