Ingredients
- 1 1/2 cups Italian style rice
- 2 tbsp honey (plus extra for drizzling)
- ground cinnamon (a large pinch)
- 15 dried apricots (no-soak, chopped)
- 3 pieces preserved ginger (drained and chopped)
- 8 dried apricots (whole, to decorate)
Instructions
- Put the rice in a saucepan and just cover with cold water; bring to a boil, reduce the heat, cover and cook about 15 minutes, until the water is absorbed.
- Stir the honey and cinnamon into the rice.
- Grease 4 ramekins (about 2/3 cup each). Blend the chopped apricots and ginger in a food processor to a smooth paste, divide into 4 and shape each into a flat round.
- Divide half the rice between the ramekins, lay the apricot paste on top, then cover with the remaining rice.
- Cover the ramekins with wax paper and foil and steam 30 minutes, until set; let stand 5 minutes.
- Unmold onto warm plates, drizzle with honey and decorate with whole apricots.
Cooking Tips
- Cook the rice until the water is fully absorbed before sweetening
- Blend the apricots and ginger until truly smooth
- Pack the layers so the puddings unmold cleanly
- Cover well with paper and foil so no water gets in while steaming
- Let them stand 5 minutes before turning out
