Ingredients
- 4 ripe tomatoes (large, quartered)
- 16 leaves arugula or sorrel (finely sliced)
- 1 yellow sweet pepper (in matchstick strips)
- 7 oz tuna (drained and chopped)
- 4 anchovy fillets
- 2/3 cup pitted ripe olives (75 g)
- 100 g mozzarella cheese (chopped (4 oz))
- 4 tbsp olive oil (for the dressing)
- 2 tbsp white wine vinegar (for the dressing)
Instructions
- Wash, dry and quarter the tomatoes. Wash, dry and finely slice the arugula leaves and put in a salad bowl.
- Remove the pits from half the olives.
- Wash the yellow pepper, remove the seeds and pith, and slice into matchstick strips; add to the bowl.
- Add the drained, chopped tuna, the anchovies, the pitted olives and the chopped mozzarella.
- Beat the oil and vinegar together with salt and pepper, pour over the salad and mix well.
- Garnish with the remaining whole olives and serve.
Cooking Tips
- Dry the arugula well so the dressing clings
- Cut the pepper into fine matchsticks for even colour
- Save some whole olives to garnish at the end
- Drain the tuna thoroughly before adding
- Dress just before serving so the leaves stay crisp
