Choosing the Right Pasta Shape for Your Sauce

Match shape to sauce
The right shape makes a sauce work. As a rule, delicate sauces suit long thin pasta, while chunky or hearty sauces need shapes with ridges, twists or hollows to trap them.
A quick guide
- Long thin (spaghetti, linguine): light oil, seafood or tomato sauces
- Long flat (fettuccine, tagliatelle): creamy or meat sauces
- Tubes (penne, rigatoni): chunky vegetable and meat ragus
- Twists (fusilli, rotini): pesto and thick sauces that cling
- Small shapes (ditali, tubetti): soups and bean dishes
Think about texture
Ridged (rigate) shapes hold more sauce than smooth (lisce) ones. When a recipe lists alternatives, choose the shape closest in size and surface to the original.
